Do the Math: Coconut Macaroon

3 x 5 = 15 Coconut Macaroons. I made these coconut macaroons. I got the recipe from Joy of Cooking Cookbook. The vanilla is overwhelming. I think I would substitute vanilla extract for coconut extract next time.

Recipe for Coconut Macaroon:
In a bowl, mix:
2/3 c. sweetened condensed milk
1 large egg white
1 1/2 tsp. vanilla (You can go easy on this. Vanilla can be overpowering when too much.)
1/8 tsp. salt

Then add:
3 1/2 flaked coconut ( I added unsweetened and I liked it.)
Drop tablespoon size onto lined and greased baking sheets for 20-25 minutes in 325 degrees (F). Remember 325 degrees. I happen to forgot to turn the oven to 325 and instead opted for usual 350 degrees. I find my oven smoking. (Literally!) When the smoke in my kitchen dissipated, I peel the macaroons from the paper before letting the macaroons cool.
